How to surprise guests for the New Year in the gastronomic sense – told UNIAN.
The New Year’s menu is a necessary annual attribute. It is impossible to imagine that on the festive table there was no real “Olivier” or a salad of crab sticks. Nevertheless, in addition to traditional hearty dishes, light snacks will always come in handy – this is both quick and tasty.

Sandwiches on the festive table

With crab sticks, cream cheese and kiwi
- Cream cheese – 150 g
- Crab sticks – 110 g
- Kiwi – 1-1.5 pcs. (100-160 g)
- Baguette – 65-100 g
- Fresh dill – 10 g
- Fresh parsley – 10 g
- Garlic – 1 clove
Put cream cheese in a container, add chopped herbs and garlic, passed through a press. To stir thoroughly. Grate the crab sticks and add to the cream cheese. Cut the baguette, spread with pasta, cut the kiwi into slices and place on each piece of baguette.
With tuna, eggs and pickled cucumbers
- Canned tuna – 140 g (1 can)
- Pickled or pickled cucumbers – 100 g (2 pcs.)
- Eggs – 2 pcs.
- Mayonnaise – 1 tbsp. l
- White toast bread – 150 g (6 pieces)
- Green onions – 20 g
- Salt to taste
- Ground black pepper – to taste

Combine the ingredients in a bowl by adding chopped green onions. Open a can of tuna, drain the liquid, transfer the fish to a container, mash with a fork and mix with other ingredients. Season with mayonnaise, salt and pepper if necessary.
Cut the slices of bread so that they form triangles, fry in a dry frying pan, in the oven or in a toaster. Spread the cooled croutons with the resulting paste, sprinkle with green onions on top.
With red fish, egg paste and lemon
- Salted red fish (trout) – 100 g
- Baguette – 130 g
- Egg – 1 pc.
- Lemon – 40 g (0.5 pcs.)
- Mayonnaise – 1 tbsp. l
- Ready-made mustard – 1 tsp
Boil eggs hard-boiled, then cool and grate on a fine grater. Add mayonnaise and mustard, stir. Cut the baguette into slices, spread the egg paste on it and put the sandwiches on a platter. Cut the red fish into slices, put on top of the sandwiches. Slice the lemon into thin slices and place 2 slices on each baguette circle.
Cottage cheese and spinach snack
- Cottage cheese 18% – 300 g
- Spinach (leaves) – 90 g
- Black bread or baguette – 300 g
- Salt to taste
- Ground black pepper – to taste
For decoration:
- Red caviar – 10 g
- Carrots – 10 g
- Pitted olives – 10 g
Cut black bread into slices or cut a baguette. Rinse the spinach, dry and put in a blender bowl, add cottage cheese, salt and pepper there. Whisk the ingredients with a hand blender. If the curd is dry, you can add a little boiled water.
Put the curd mass on the herringbone-shaped bread using a spoon or pastry syringe. Decorate with finely chopped carrots and olives.
Snacks in tartlets

With chicken and mushrooms
- Tartlets – 15-20 pcs.
- Chicken fillet – 500 g
- Champignons – 300 g
- Eggs (boiled) – 3 pcs.
- Bulb onions – 1 pc.
- Mayonnaise – 3 tbsp. l
- Vegetable oil – 2 tbsp. l
- Salt to taste
- Ground pepper mixture – to taste
For decoration:
- Olives – 15-20 pcs. (by the number of tartlets)
- Fresh parsley – to taste

At the end, season with salt and pepper and let cool. Finely chop the chicken, do the same with the eggs. In a large container, mix fillets, eggs, mushrooms and onions, season with mayonnaise and stir. Fill the tartlets with the filling, garnish with parsley leaves and olives.
With crab sticks, corn and avocado
- Shortcrust tartlets – 16 pcs.
- Avocado – 210 g
- Crab sticks – 6 pcs. (100 g)
- Canned corn – 70 g
- Mayonnaise – 20 g
- Fresh parsley – 3-4 sprigs
- Salt – 2 pinches
Remove the crab sticks from the packaging, chop finely. Carefully cut the avocado lengthwise, twist and remove the pit. Make several cuts in the pulp, and then use a spoon to remove it from the rind. Chop the herbs finely. Put all the ingredients in a separate container and add the corn. Season with mayonnaise, pepper, mix thoroughly. Fill the tartlets with a festive filling.
With cheese, eggs, red fish and caviar
- Sand tartlets (large) – 1 pack (6 pcs.)
- Hard cheese – 100 g
- Salted red fish – 80 g
- Red caviar – 25 g
- Eggs – 2 pcs.
- Mayonnaise – 1 tbsp. l
- Salt to taste
- Ground black pepper – to taste
For decoration:
- Medium carrots – 1 pc.
- Cucumber – 1 pc.

Peel the boiled carrots, cut into slices, and then cut the stars out of them. Wash the cucumber, chop thinly with a potato peeler, roll into rolls. Take toothpicks, string on each first a cucumber roll, and then a carrot star (it should be at the top). Fill the tartlets with the filling, put the red caviar on top and place the toothpicks.
Herring under a fur coat
- Herring (fillet) – 250 g
- Boiled beets – 200 g
- Cream cheese – 150 g
- Boiled carrots – 100 g
- Red onion – 50 g
- Black bread – 9 pieces
- Salt to taste
For decoration (optional):
- Boiled egg
- Green onion
Put the carrots, beets and cream cheese in a blender bowl, salt and chop. If you want a more familiar taste, you can add mashed potatoes and mayonnaise instead of cream cheese. Taste the finished mass, add seasonings if necessary, transfer it to a pastry bag and put it in the refrigerator.
Prepare the tartlets: cut the bread into slices, cut the crusts, preheat the oven to 200 ° C. Grease the bottom of the muffin pan, add bread, bake for 10 minutes. Cut the onion into half rings or small cubes, chop the herring fillet. Put onion and herring into ready-made bread tartlets, make “roses” from beet mousse on top. Garnish with boiled eggs and green onions if desired.
