The most airy cinnamon buns: a recipe like in a pastry shop
Homemade cinnabons are very lush and incredibly fragrant.

Cinnabons, or cinnamon rolls, are a world-famous pastry that is found on the menu of most coffee shops and pastry shops. Airy and slightly viscous dough with butter cream create the perfect combination. You can make fragrant cinnabons at home if you follow the recipe. To make the dough airy and successful, be sure to take the freshest yeast.
Homemade cinnabons – cinnamon buns
Dough Ingredients:
- flour – 550 g;
- dry yeast – 8 g;
- eggs – 2 pcs.;
- milk – 250 ml;
- butter – 80 g;
- sugar – 140 g;
- a pinch of salt.
For the filling:
- brown sugar – 200 g;
- ground cinnamon – 1 tbsp;
- butter – 80 g.
For cream:
- soft cream cheese – 200 g;
- butter – 70 g;
- sugar – 100 g.
Leave the eggs at room temperature. Melt butter. Heat the milk to a temperature of approximately 40°. Add yeast and a couple of tablespoons of sugar to the milk. Stir, cover with a towel and leave the dough for 10 minutes.
Sift flour into a large bowl, add sugar and salt. Beat two eggs into the flour, pour in the milk mixture with yeast and add the melted butter. Mix the dough, first with a spoon, and then with your hands, until it begins to lag behind your hands a little. Do not add more flour, even if the dough is too sticky, otherwise the buns will turn out “clogged”.
Sprinkle the table with flour and continue to knead the dough until it stops sticking to your hands. Put the dough in a bowl greased with sunflower oil. Cover the bowl with a damp towel and refrigerate for 1.5-2 hours. It should increase in size.
When the dough has risen, roll it out on the table into a thin rectangle. Then prepare the filling. To do this, grease the dough along the entire length with softened butter. Mix the cinnamon and sugar and sprinkle evenly over the buttered dough. Lightly press the sugar mixture into the dough with your hands. Roll the dough rectangle into a roll. Cut the roll into circles of the same size – you will get about 12 pieces.
Put the buns on a baking sheet with parchment and leave for 30-40 minutes to rise. During this time, preheat the oven to 180°. Bake the buns for 30-40 minutes until they are browned.
For cream, beat ingredients until smooth. Instead of cream cheese, you can take cottage cheese and a couple of tablespoons of sour cream. Grease hot buns with cream immediately after baking. And serve fragrant pastries to the table.
