Spicy and refreshing: Georgian fresh vegetable salad Glekhurad
Glehurad vegetable salad tastes crunchy, spicy and fresh at the same time.

Glekhurad is a Georgian fresh vegetable salad dressed with walnut and garlic sauce. It’s hard to imagine a more spring dish. This salad is very refreshing and complements meats or sausages well. In addition, glehurad is completely harmless to the figure, since there is no sunflower oil in the recipe.

Glehurad salad
If you wish, you can replace or remove some of the vegetables, as well as change the proportions of the products.
salad ingredients:
- cucumbers – 200 g;
- tomatoes – 200 g;
- bell pepper – 200 g;
- radish – 100 g;
- purple onion – 50 g;
- lettuce leaves – 3-4 pcs.
Dressing Ingredients:
- walnuts – 70 g;
- garlic – 3 cloves;
- water – 3 tablespoons;
- apple or wine vinegar – 1 tbsp;
- seasoning suneli hops – a pinch;
- ground hot pepper – a pinch;
- salt, pepper to taste.
For the dressing, rinse the nuts and toast lightly in a dry frying pan. Cool down. Grind the nuts in a mortar or in a blender bowl. Grate the garlic on a fine grater or chop with a garlic press. Mix chopped nuts, garlic, vinegar, suneli hops and hot peppers, add some water and salt to the dressing. The dressing will be quite thick.
Cut the radishes, onions and cucumbers into thin half rings, and cut the tomatoes into thin slices. Pepper cut into strips. Tear lettuce leaves with your hands. Mix all vegetables in a salad bowl. Salt a little and stir.
Add dressing to salad and mix. Leave the salad in the refrigerator for 20-30 minutes. During this time, the vegetables will start juice and mix with aromatic dressing.
